L'Atelier de Joël Robuchon seats most of its diners on high-backed stools along a red-and-black counter that looks straight into the kitchen.
Why go
The late Joël Robuchon won 32 MICHELIN stars over his career, more than any other chef.9 Two restaurants carry his name side by side at the MGM Grand, where MGM Resorts still calls him the Chef of the Century

Robuchon visited Las Vegas three times a year to change the menus of both rooms. He told Forbes Travel Guide in 2015 how he chose what went on them: As a general rule, it's based on the ingredients we find at that time, period.
7 World Traveller 73, a travel blogger who ate at the counter in November 2024, reports that the Seasonal Discovery Menu still changes with the ingredients. Nine in ten diners around him ordered it too.9
The dish to come for is the pommes purée, the potato purée MICHELIN's inspectors call the late chef's world-famous pommes purée
.1 Adam Parkzer, who writes a personal blog, had it beside the quail in January 2026 and got a second bowl on the side: This potato purée might have been the best potato purée or mashed potatoes I've ever had.
He wrote that it didn't taste insultingly fatty and it still had a strong potato flavor.

Parkzer also names the catch: Although this was a very good restaurant, it wasn't quite at the level of being a particularly stand-out experience.
He would not put it first on a short trip, especially at that price: $255 for the menu, and $360.37 once he added two drinks, tax and tip.8 World Traveller 73 disliked being offered upgrades on top of that price, such as a Kagoshima A5 rib eye for $45 more and an off-menu truffle risotto at $189: I do find the upgrade / upsell theme to be a little out of place for a high end restaurant.

- Two Robuchon rooms stand next door to each other. This is the counter restaurant. Joël Robuchon, the formal room with two MICHELIN stars, is the other, so check which one you are booking.3
- Book on SevenRooms or on (702) 891-7358. World Traveller 73 had to leave a card against a $75 fee for a no-show or late cancellation in 2024.59
- Call to check which nights it opens before planning around it.
- Dress business casual. No shorts, sportswear, sweatpants, flip-flops or hats, per World Traveller 73 in 2024.9
- Ask for the vegetarian tasting menu when you book. It is not on the menu posted outside and needs notice.9
- The counter is narrow, with little room for a phone or a menu beside your plate (World Traveller 73, 2024).9
- Allow two and a half hours. Parkzer's meal took that long in 2026 and he found the pacing a bit slow.8

Verdict
should-visit — Sit at the counter and take the discovery menu for the foie gras-stuffed quail and the potato purée the late chef made famous, cooked in front of you. The cooking is very good without standing out. Budget over $300 a head once tax and tip are added.
