A handful of Austin kitchens cook whole corn with lime, grind it that morning and press the tortillas they serve. Most of the city's best taquerias do not, and Texas Monthly's taco editor says where their corn tortillas come from instead.

The chefs' night out

- Industry night. Tuesdays at Kramer's Cocktails, the agave bar the Limon cousins built into the other half of the Hopsquad building in August 2024. Call before you count on it.
- The day-off plate. Cold beer and raw oysters at Quality Seafood Market, where James Holmes of Olivia told the Chronicle people find him on a day off.
- best version at Half Step Jen Keyser, thirteen years behind Austin bars and then pouring at Contigo and Midnight Cowboy, named this one for the trade. She credited Chris Bostick's staff and the custom ice.
- sold at Hopsquad Brewing Co Kramer's Cocktails runs the industry night on Tuesdays, in the air-conditioned half of the brewery building.
- sold at Quality Seafood Market James Holmes, then the chef of Olivia, gave this as where he spends a day off. The oyster bar runs down the middle of the fish market and the beer is cold, which is the whole of his point.
- sold at Bartlett's Tyson Cole named the grilled artichokes here when the Chronicle asked him where he eats after a shift. The Infatuation reached the same artichokes fourteen years later.

Food & Wine named Austin the No. 1 Best U.S. Coffee City in April 2026, off a survey of more than 400 chefs, writers and wine professionals. The rooms that won it are mostly built inside somebody else's business, so the espresso bar shares a lot with a beer wall, a barbecue truck or a bakery.

Tito Beveridge fought the state for the first legal distilling licence in Texas and built his first pot still out of two Dr Pepper kegs and a turkey fryer. Austin has been distilling ever since, and the newest rooms are doing it off grain and water the city can point at.
- Tito's Handmade Vodka. It is distilled from a corn mash in pot stills, and it outsold Smirnoff to take the top of the American spirits market.
- Goodnight Loving Vodka. Made by a father and son on Goodnight Loving Spring water, and it took Platinum at the 2024 San Francisco World Spirits Competition.
- Still Austin whiskey. A mash of 70 percent corn, 20 percent wheat and 10 percent malted barley, off a 42-foot column still built in Scotland.
- Kruto Flawless. Distilled in central Ukraine off a 300-year-old Cossack recipe, fifteen times through the still, and sold here by a Texas company.
- best version at Still Austin Whiskey Co. The first whiskey distillery inside the city limits since Prohibition, working the white corn Texas grows for tortillas.

Hill Country wine, made in town
a habit of the placeAustin, the Hill Country and the Texas High Plains AVAMost Texas wine grapes grow on the High Plains, hours from any tasting room, and the winemaking happens in a warehouse in South Austin or a shed on Highway 290. So the room you drink it in is almost never the farm it came off, and the label is now legally obliged to say where the fruit was grown.

- best version at C.L. Butaud Wines Every wine is 100 percent Texas fruit, and the Counoise carries its vineyard's name on the label.
- best version at Ron Yates Wines All Texas fruit, much of it trucked from the Guadalupe Mountains and the High Plains to a 290 tasting room.
- best version at William Chris Vineyards Estate blocks in Hye plus fruit bought from family growers across the state, and the only Texas name on the 2025 World's 50 Best Vineyards.
- best version at Duchman Family Winery Italian varieties on purpose, grown mostly on the High Plains and made at Driftwood.
- best version at Kalasi Cellars The exception on this highway. Every grape comes off the family's own High Plains block and nothing is bought in.

Texas Monthly prints the same two words beside joint after joint on its Top 50, post oak, and the rub is salt and pepper and nothing else. The counter sells beef by weight onto butcher paper and shuts when the meat is gone, which is why the hour you arrive decides what is still on the board.
